Cheese Dragons are not actually alive. They are enchanted items of food that act almost identically to dragons. They have no need to eat, but they must “live” in humid environments or they will dry out and harden.

Knight, which is this dragon's nickname, is... well, a little over-imaginative. He (knight thinks of himself as a he) saw a real knight ride by down on the road one day when he was younger, and was completely entranced. Ever since, Knight has loved acting like a knight himself. He steals slices of cheese from the Keeper of the cave's lunch and makes them into armor, gaining him his full name, and runs around with a stick sword trying to get someone to joust him. He'll even go as far as stabbing another dragon with his stick, trying to rescue an imaginary princess or something. Despite this being incredibly annoying to the other dragons, they can't help but be amused by Knight's amazing imagination.
