Cave-aged gruyere is matured for about one year in the secluded sandstone caves of Kaltbach near Lucerne in Switzerland. This delicious gourmet cheese develops a dense texture with small salt crystals. It is regarded as such a delicacy that one master of wizardry could not help but preserve a large amount of cave-aged gruyere in dragon form. And thus was Cave-Aged Gruyere Cheese Dragon created.
