Cheese Dragons are not actually alive. They are enchanted items of food that act almost identically to dragons. They have no need to eat, but they must “live” in humid environments or they will dry out and harden.

Ambrose's gender is unknown, but the clan refers to it as a male. He's naturally very protective of himself, as there is always the chance that ignorant little hatchlings or possibly unfriendly dragons would come and try to eat him. He's highly reserved when it comes to socializing, and prefers being around in small groups to limit the chances of an attack. He's really quite the speaker, though. When he does associate with others, he talks so well that it's almost like he's a real dragon.
