Cheese Dragons are not actually alive. They are enchanted items of food that act almost identically to dragons. They have no need to eat, but they must “live” in humid environments or they will dry out and harden.

This used to be a Leyden cheese just like any other. Made by a Dutch farmer, exported overseas, sold at a town market to a local girl and brought home to create an ordinary cheese sandwich. Only at lunchtime one ordinary day, things started to get different. With the first bite the young woman took she realised that this was the most excellent cheese she had ever eaten! She called one of her White dragons, called Leanabha, and asked her to cast a spell over the cheese that would make it last forever. The dragon waved her staff and suddenly, the bits that were eaten reoccurred and the cheese rolled itself into the shape of an egg. Eight days later, the cheese had taken on the shape of a full-grown dragon. Now it can move and communicate just like any other species, but fortunately it doesn't feel pain, so everyday at lunch a little bit of Leyden Cheese gets eaten, and magically grows back.
